1 c. butter
1 c. shortening
2 c. white sugar
2 c. brown sugar
4 eggs (powdered eggs are recommended – 1/4 c. dehydrated eggs with 1/2 c. water)
3 tsp. vanilla or almond extract
4 c. freshly ground whole wheat flour (white or red wheat)
4 c. quick oatmeal, pulverized in K-Tec Champ Blender but still chunky
1 1/2 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
24 oz. chocolate chips (optional)
8 oz. chocolate, grated (optional)
Preheat oven to 375 degrees. Cream together butter, shortening and sugars. Add eggs (or powdered eggs and water). Make fresh whole wheat flour by grinding wheat in your WonderMill Electric grain mill or handmill. Add fresh whole wheat flour, pulverized oatmeal, salt, baking soda and baking powder to butter/sugar/egg mixture. Mix until combined. Add chocolate if desired. Bake for about 10 minutes. Remove from oven BEFORE they look done (they will look a little gooey) for a softer and chewier cookie.
NOTE: This makes A LOT of cookies! Dough and cookies freeze well. Also, measure the oats BEFORE you blend them or the cookies will be hard.
